John has rediscovered a passion for grapefruit, and now we have halves for breakfast, juice on the weekends and plenty of citrusy cocktails–like this heavenly combination that includes tequila and Aperol. It's my kind of summer sipper!
The 212
2 oz tequila
2 oz freshly squeezed ruby red grapefruit juice
1 oz Aperol
Soda
Combine tequila, grapefruit juice and Aperol in a shaker with ice; shake for no more than 5 seconds. Strain into a Collins glass filled with ice; top with soda, garnish with a grapefruit slice.
Notes: Whatever your favorite (or on-hand) tequila is will go nicely into this cocktail–John and I have been using the Corralejo Reposado–but won't find a substitute for Aperol. I promise that if you don't already have a bottle of this Italian apertif, you're about to fall in love. Cheers!
