This cocktail is the perfect antidote to the common Mimosa–simply replace the orange juice with something a bit more flavorful, and you have a cocktail worthy of its own toast at brunch!
Blood Orange Bubbles
1 1/2 oz blood orange juice
Champagne
Fill a flute or coupe glass with 1 1/2 oz of juice, then top with Champagne or another sparkling wine.
Notes: Brunch cocktails, in my humble opinion, should always be fairly simple–there's no sense in flaming an orange peel before you've had your morning coffee! As always, there's no need to splurge on expensive Champagne when cava or Crémant will be just as lovely. Cheers!
