The only thing better than endless glasses of summer water might just be a rosé you can sip all day long!

Rosé All Day

2 oz rosé
1 oz Lillet
1/2 oz freshly squeezed lemon juice
soda water

Combine rosé, Lillet and lemon juice in a shaker with ice. Shake vigorously for 5 seconds, then strain into a Collins glass filled with ice. Top with soda, garnish with freshly slapped mint and a slice of lemon.

A dry rosé will pair best with Lillet; I'm partial to pinot noir rosés from California like Banshee, or Provençal styles, especially Bandol. No need to spend more than $20 on a bottle, and look for 2014 vintages, since rosé, like Beaujolais Nouveau, is really meant to be drunk in the year or so following its release.
