Eastside Rickey

 There's nothing like a tall glass of something cold on a hot day, and the Eastside Rickey, with lime, mint and cucumber might be the perfect summer cocktail. Best of all, you can omit the gin for a non-alcoholic sipper this Memorial Day!


  Eastside Rickey

2 oz gin
1 oz freshly squeezed lime juice
3/4 oz syrup
8 mint leaves
sliced cucumber
soda water

Gently muddle mint leaves and cucumber in a cocktail shaker. Add gin, lime juice, syrup and ice, and shake vigorously for 10-15 seconds. Double strain into an ice-filled Collins glass, top with soda and garnish with a cucumber slice. 
 
Notes: International gins like Hendrick's or Tanqueray No. 10, both with citrus notes and plenty of pep, would be particularly lovely in this summer sipper, but grab whatever you've got in the liquor cabinet and whip yourself up a drink–it's the weekend after all! Cheers, and Happy Memorial Day!
