Le Bernardin is more than simply sublime seafood; they also have a divine cocktail menu, and this combination of orange apertif and peppery Pinot is perfect for this transition from summer to fall!
Aperol Noir
1 oz Aperol
1 oz Pinot noir black pepper agave syrup
1/2 oz freshly squeezed lemon juice
2 dashes orange bitters
Champagne
Pinot Noir
Combine ingredients in a shaker with ice; shake for 10-15 seconds. Pour 3 oz Champagne in an ice-filled
highball and strain drink over champagne. Float 1/2 oz pinot noir on top and
garnish with an orange twist.
Notes: All in all this recipe is a bit fussier than I'd normally feature (or make at home)–but it's fabulous for evenings when you can't decide between a glass of wine, bubbles or a cocktail. While I don't have Le Bernardin's exact proportions for Pinot noir pepper syrup, John and I did a little experimenting and here's what we discovered: a 1/4 cup of Pinot and 1/4 cup amber agave syrup cooked until the syrup takes on the agave's original consistency will produce a balanced, perfectly sweet syrup–we added an imprecise handful of peppercorns for a bit of kick.
