Rum Vieux Carré

Concocted in 1930's New Orleans at the Carousel Bar of Hotel Monteleone, the Vieux Carré is a big girl drink of the highest order. The classic combines cognac, rye, sweet vermouth and Bénédictine, but for a taste of the warm weather to come, rum can be substituted for cognac with the most delicious results!


Rum Vieux Carré 

¾ oz Demerara rum
¾ oz rye whisky
¾ oz sweet vermouth
¼ oz Bénédictine liqueur
Dash of Peychaud’s bitters
Dash of Angostura bitters
Lemon peel

Combine liquors and bitters in a mixing glass; add ice and stir. Strain into a chilled cocktail glass and garnish with a lemon peel.  

Notes: El Dorado Demerara rum is delicious, but in case you can't find it (or any other Demerara rum) on the shelf, chose a well-aged spirit with only moderate sweetness–steer clear of heavy dark rums like Myer's Gosling's Black Seal. John reccomends an inexpensive rye for this spiritous cocktail, but suggests investing in a sweet vermouth you really enjoy. Cheers!
