I remember my first Pisco Sour vividly–it was a graduation party, and my parents had just returned for a trip to Peru with bottles of this Latin American brandy. Suddenly someone was mixing up potent sours, and I thought, "What a wonderful alternative to vodka-cranberries!" In some ways, it was my first real cocktail; if you haven't enjoyed a Pisco Sour already, I couldn't recommend one more highly!
Pisco Sour
1 1/2 oz pisco
3/4 oz freshly squeezed lemon juice
1/2 oz simple syrup
white of one egg
Combine all ingredients in a cocktail shaker; shake vigorously without ice for 10 seconds. Add ice and shake for 10 seconds. Strain into a chilled cocktail glass.
Notes: I know–egg whites. If you've never had a Pisco Sour (or another cocktail) with egg white, you probably won't miss it, but it adds an irresistibly lush texture. Tradition does call for egg white, but not for the drop or two of bitters on the foamy top of this cocktail; John loves to drag a toothpick through the bitters to make hearts. Amargo is Peru's most popular bitters, but Angostura will work just fine. Cheers!

ReplyDeleteSo delicious! Can't go wrong with a good pisco sour. We learned to make them with lime rather than lemon, and ours definitely involve a dash or two of bitters on top. Haven't quite mastered the bitters-art yet, though...
