
Tom Collins
2 oz of gin
1 oz of freshly squeezed lemon juice
3/4 oz of simple syrup
soda
Combine gin, lemon juice and simple syrup in a cocktail shaker with ice; shake for no more than 10 seconds. Strain into a Collins glass; top with soda.
the Harrington
2 oz of gin
1/4 oz of orange curacao
1/8 oz of green chartreuse
orange zest
Combine gin, orange curacao and green chartreuse in a cocktail shaker with ice; shake for no more than 10 seconds. Strain into a cocktail or coupe glass; Squeeze the zest of one orange peel over the top of the cocktail.
Notes: While a Collins typically calls for Old Tom Gin and a Harrington is best with Miller's Westbourne, the simplicity of Miller's makes it appropriate for both cocktails.
The zest of an orange peel is critical to the Harrington; skip it, and you'll be sipping a sub-par cocktail.

Love me a Tom Collins! We're not doing anything this weekend except taking a trip down the street to the library to study up on buying a home. I'm pretty excited for whatever might happen!
