I am crazy for coconut, especially in the summer. Mr Wonderful and I discovered Luna and Larry's Coconut Bliss ice cream at our local vegan co-op (how San Francisco!) and I'm always begging him to make me grown-up piña coladas. This cocktail from Cienfuegos in Manhattan and inspired by the New Orleans classic, the Ramos Gin Fizz, is the perfect blend of sweet and sultry for summer evenings! Enjoy your weekend!


Isle of Manhattan Fizz

½ oz lime juice
½ ox pineapple juice
¾ oz simple syrup
2 oz coconut purée or ice cream
4 drops of orange flower water
¾ oz dark rum-I chose Barbancourt 15 year
¾ oz Old Tom gin
2 tablespoons of club soda

Combine lime juice, pineapple juice, simple syrup, coconut purée, orange flower water, rum and gin in a shaker; mix using an immersion blender (or the spring of a Hawthorn strainer).

Add ice and club soda; shake for 30 seconds. Strain into tall, stemmed glass. Garnish with a wide twist of lime.
