Pineapple Mint Julep

A few days ago, I sampled Pressed Juicery's citrus 2, chock full of pineapple and mint. I couldn't help but imagine it as a cocktail, so rather than finish the bottle in one fell swoop, I brought it home and enjoyed it with a bit of rum and a whole lot of crushed ice. While it made a great tiki cocktail, I thought the flavors would also pair beautifully with a bit of bourbon!


Pineapple Mint Julep

2 oz bourbon
1 oz syrup
2 oz pineapple juice
8-10 mint leaves, plus a sprig for garnish
crushed ice

In the base of a julep cup or shaker, gently press mint leaves into syrup. Fill glass with crushed ice, then add bourbon and pineapple juice. Stir, then fill with more crushed ice. Top with freshly slapped sprig of mint.

Notes: Unlike a traditional julep, which gets easier to drink as the bourbon is diluted, this potent libation will fool you, and fast. I'd highly recommend that you make every other a glass of water–cheers!
