Few cocktails are lovelier than a simple Kir Royale–this one substitutes cassis for blackberry liqueur for a perfect summer sipper.
Blackberry Kir Royale
1/2 oz crème de mûre
Champagne
Pour crème de mûre into a flute; top with Champagne and serve immediately.
Notes: Crème de mûre, or blackberry liqueur, will stay good for ages, so invest just a bit in a high-quality bottle; John and I like Clear Creek and G.E. Massenez's versions in particular. The bubbles, on the other hand, can be inexpensive (Saint-Hilaire is my favorite budget sparkler). Cheers, and happy August!
