Smoky Cider

In San Francisco, the days are warm but the evenings are still a little chilly–making this the perfect season for a gently smoky sipper. After dinner at Trou Normand a few weeks again, John and I have been experimenting with apple brandies at home, and this cocktail has been scoring high! 


Smoky Cider

1 oz Armagnac or apple brandy
1/4 oz smoky mezcal
1/2 oz honey syrup
6 oz French apple cider, chilled

In a tall, ice-filled glass, combine Armagnac or apple brandy and honey syrup; stir. Pour in apple cider and stir to combine. Top with mezcal and garnish with an apple slice.  


Notes: Inspired by Tasteseeker's Kitchen, John and I used an apple spirit as the base for this cocktail; we adore Clear Creek's apple brandy, but it can be tricky to find and any apple brandy would work beautifully. If you don't have mezcal on hand, you can always substitute it for Scotch in this cocktail. The one ingredient I would be a bit fussy about is the hard cider–French ciders are usually a bit less sweet, and you'll need something with a fair amount of acid to really make this drink sing.
