Semifreddo Bellini

"Semifreddo" means "half cold" in Italian, and this slushy mixture of peach and Prosecco is the perfect thing on a warm summer evening (or afternoon)! If you've got a peach tree in the yard you could make your own sorbet–this super-simple recipe from Serious Eats and a version kicked up with basil would both be divine–but all you really need is a pint of peach sorbet and a chilled bottle of bubbly–cheers!
