Royal Badminton Cup

The Badminton Cup, also called the Eastside Cocktail, is crowned with the addition of Champagne;
if the only thing you needed to make anything Royal was bubbles, I think we'd all be Duchesses!


Royal Badminton Cup

2 oz gin 
1 oz freshly squeezed lime juice
1 oz syrup
 mint leaves
cucumber rounds
Champagne

In a cocktail shaker, gently muddle 6 mint leaves and 4 cucumber rounds with simple syrup. Add gin, lime juice and ice; shake. Pour into a tall glass and top with Champagne or sparkling wine.


Notes: Mild, gentler gins like Plymouth or Miller's Westbourne are de rigueur in this cocktail, but an herbal gin like Hendrick's or St George Spirits Botanivoir could be an inspired alternative. If you don't have bubbles on hand, you can always top this cocktail with soda–cheers!
