Blessed

After a hectic week and many meals out (John and I celebrated our anniversary on Monday over pâté and bubbles at Café Claude, and we toasted to the Fourth of July with Indian food–naturally!), all I wanted on Friday night was to cook–I find it can be so relaxing! I filled in the early part of the evening catching up on emails and Pinterest, then John played sous chef while I cooked up curried chickpeas and couscous. We took a little coupe of vanilla ice cream into bed with us and fell asleep long before the closing credits of a West Wing episode.

John has taken to reading in bed while I catnap early in the morning, and after a lazy hour or so, we pulled on some clothes and headed to the beach. The cloudy day and the early hour meant we were able to grab a table at the Beach Chalet–and good thing, because we were both starving! After a mushroom omelet and eggs benedict, we strolled home before John took off for work. The weather was perfect for curling up with a book and a cup of tea–which is precisely how I spent the better part of the afternoon. I whipped up a grilled corn and avocado salad for dinner and we cozied up as the summer fog rolled in.

We both caught up on sleep Sunday morning, so a simple breakfast was in order–a few roasted fingerling potatoes, avocado toast topped with a fried egg and a cup of English breakfast tea. I spent the next few hours blogging, emailing and generally relaxing until I pulled on my yoga clothes and enjoyed a long, challenging practice. Then I made a quick trip to the grocery store for a few last minute ingredients and cooked a paella for Sunday dinner. It was such fun having my younger brother over for a traditional family supper; we drank a bottle of wine, shared in John's love of absinthe and Charlie crashed on the air mattress in the living room–while I was filled with a sense of thankfulness for my family.

Tell me, what were you thankful for this weekend?
