John's spring break starts tonight, and he's been looking forward to an over-the-top cocktail to celebrate–I think this rummy libation should do the trick!
Blueberry Mojito
2 oz white rum
3/4 oz freshly squeezed lime juice
1/2 cane syrup
mint leaves
blueberries
Pour cane syrup into a Collins glass, then add mint; gently press leaves using a muddler, add blueberries and repeat. Add rum and lime juice, then stir well; top with shaved ice and swizzle. Top with soda and blueberries.
Notes: Cane syrup can be substituted for simple syrup made with 2 parts turbinado sugar to 1 part water. Cheers, and enjoy this first spring weekend!
