Tequila is one of my favorite spirits, but it seems especially appropriate in the summer months. San Francisco may not be its warmest in June, but I intend to fake a little sun with this tequila and honey cocktail, a Taxco take on the margarita!
Bertha
2 oz tequila
1 oz lime
3/4 oz honey syrup
egg white
soda
Combine tequila, lime, honey syrup and egg white in a shaker; dry shake for 10 seconds. Add ice and shake for an additional 5-10 seconds. Strain into a highball glass and top with soda.
Both John and Gourmet recommend a blanco tequila for this particular libation, although you can always use what you have on hand. To make honey syrup, combine equal parts honey and hot water, then stir until honey is dissolved. Cheers!
