Coconut Milk Punch

I adore Milk Punch and can't ever get enough coconut, so it's only natural that I'd be a fan of this tropical version. You don't have to make your own coconut milk to make a delicious cocktail, but it does mean you've got a coconut shell to drink out of! 


Coconut Milk Punch

4 oz coconut milk 
1 1/2 oz light rum
1/2 oz simple syrup
vanilla extract
whole nutmeg
crushed ice

Combine coconut milk, rum, simple syrup, and a dash of vanilla extract in a shaker with crushed ice. Shake for no more than 10 seconds, then strain into a chilled glass and sprinkle with freshly grated nutmeg.


Notes: If you're game for making your own coconut milk (for this cocktail or a delicious non-dairy alternative), here how: 

Grate the meat of 1 coconut, wrap it in a damp cheesecloth and squeeze it over a bowl to extract the milk, then reserve. Transfer the cheesecloth-wrapped coconut to another bowl and pour 1/4 cup boiling water over the unwrapped coconut. Squeeze the mixture through the cheesecloth into the bowl to extract all the liquid, then add the reserved milk.

  12. That sounds divine! I have a ton of coconut milk right now because I've been treating myself to banana ice cream. A frozen banana in the food processor with a little coconut milk...and a swirl of nutella.
