Winter cocktails made with dark base spirits and spices are delicious, but sometimes you need something brighter and lighter–like this Parkside Fizz. The orgeat syrup is a classic ingredient in tiki cocktails too, so it won't get dusty on your bar cart!
Parkside Fizz
serves 6
6 large mint sprigs
5 tablespoons orgeat syrup
1 1/2 cups citrus vodka
1/2 cup plus 1 tablespoon fresh squeezed lemon juice
club soda
Trim lower mint sprigs off sprigs, reserving 2" stems plus leaves for garnish. Please in a medium pitcher and muddle with orgeat. Add vodka and steep for 5 minutes, then add lemon juice. Strain, then return to pitcher.
Pour half of the mixture into a cocktail shaker; shake with ice for 10 seconds. Strain into 3 fizz glasses filled with ice, then top with club soda and garnish with mint sprig.
Notes: I love cocktails that with minimal work can become tasty mocktails, and I know not all of you are drinkers. Simply omit the vodka, double the orgeat and add soda to fill–cheers!
The straw makes it for me. Everyone needs a little whimsy on Friday's!
