My first experience with anise liquors involved my father and my cousin Maria, a large bottle of Ouzo and a fair amount of sputtering. Even this cocktail buff is occasionally felled by a new recipe or liquor!

That said, anise liquors are nothing to fear-especially when you cut them with a little cold water (my rookie mistake). While Greek Ouzo will make you feel like chucking a few plates this weekend, something about Pastis feels a bit more refined, even if only in my imagination. The association with Manhattan's Meatpacking District restaurant certainly doesn't hurt.


Pastis

1 oz of pastis
5 oz of cold water

Pour pastis in glass; add water. Add ice cubes if desired after mixing.

Notes: Pernod or Richard's Pastis are the best known, and for good reason-they're inexpensive and perfectly herbal. Don't be afraid to try different ratios of pastis to water if you find you can't get enough of the flavor!

  1. There's so many anise-flavored liqueurs out there, I'm always amazed when someone hasn't tried one. My first experience was with a bottle of raki in Turkey. And yes, with a bit of water to make it cloudy :)

  5. Bryan's grandma swears by cutting liquor with water. I tried it last weekend with the pear vodka, it helps!

  16. I love the milkiness when you add water. I haven't had pastis but we hit the ouzo hard on my parent's 30th anniversary. They met in Crete so it was necessary.

  19. I have to admit, ouzo is maybe my least favourite drink, so I don't think this one's for me! Have found myself secretly throwing it into the bushes when waiters bring it to my table seven nights in a row on Greek holidays! ;)

  27. While I love pretty much anything French, I despise Pastis. Perhaps it was because I tried it without knowing that I would be tasting anise/black licorice, but this is one drink that just does not agree with me! I'll happily take a kir instead! ;)
