The Perfect Margarita

As a Texan born on Cinco de Mayo, there are few things John takes more seriously than a perfect margarita (these include Walker, Texas Ranger, an impeccably cut suit and my shouting). I can't believe that after nearly a year of cocktail posts, I haven't shared our secret for this heavenly tequila cocktail, but don't worry-I'm about to right this most egregious of wrongs!


the Margarita

2 oz of tequila
1 oz of freshly squeezed lime juice
1/2 oz of dark agave nectar


Combine all ingredients in a shaker with ice; shake for 5-10 seconds. Strain and serve in a cocktail glass, or pour into a highball glass.


Notes: We usually pick a reposado tequila, for margaritas and everything else; Corralejo is our favorite.

Dark and light agave are both delicious, but dark is sweeter and a bit more complex. If you can't find dark agave or already have the light stuff on hand, you may need up to 3/4 of an ounce for the perfect combination of sour and sweet!

I know lots of people love salt with their margaritas, but the truth is that the drink doesn't really need it. If you're craving that kick, salt just a small portion of the rim or use a salt-sugar mix.
