a Raspberry Mojito

Sometimes you just can't wait for summer, and with raspberries stocked on every supermarket shelf, there's no need to! This colorful cocktail is a twist on a classic Cuban highball; Ernest Hemingway made La Bodeguita del Medio famous when he professed his love for their mojito, although to be honest, I much prefer John's!


Raspberry Mojito

1 1/2 oz of white rum
1 oz of freshly squeezed lime juice
3 sprigs of fresh mint
2 teaspoons of sugar
8 raspberries
soda water

In a Collins glass, muddle mint, raspberry and sugar until well-mixed and fragrant. Add rum and lime juice; stir well. Add a generous handful of ice, then top with soda water. Add a few berries and a sprig of mint to garnish.

  18. Will I like this if I'm not fond of regular mojitios? I always want to like them and never end up finishing one when it's in front of me. I'm going to live on the wild side tomorrow and order a drink at brunch (before noon, oh boy!). I feel like you'd be proud.
